Avocado Feta Dip and Homemade Pita Chips ~

Oh, the Super Bowl.  Football is kinda lame. I always think how it would be so much more fun if I could rearrange the rules. Too much time is wasted stopping and starting, stopping and starting...it is so inefficient and boring. I guess I don't understand why they can't just keep going? Someone is tackled and they STOP and analyze what happened. That happens like every one minute, or less! Wouldn't it be much more fun to watch if they just wrestled and brawled until there was a touchdown?? Isn't that the more manly way?? I guess football must have been created by a girly-man. 


Despite my football annoyances, I sure love my husband and I sure love food. So, the Superbowl is a perfect excuse to pig-out.  I found this recipe, um...somewhere...and adjusted it to suit my taste.  And, I thought my pita chips would be perfect to dip in it...and, I was right.  I must be perfect, too.



You will need a tomato, 2 avocados, 1 garlic clove (or a tsp. of pre-minced garlic), oregano, olive oil, white wine vinegar, and feta cheese. (I am anti-onion, but if you want you can add some chopped red onion, 1/4 cup.) Also, the above ingredients are only for the salsa. You need a few additional things for the chips, namely: pitas, grated parmesan, Italian seasoning, and butter.


 Chop up the avocados, tomatoes, 1 clove garlic, and 1 TBS oregano.


Mix them together in a bowl and add 1 TBS olive oil and 1 TBS white wine vinegar. Then stir in 6 ounces of feta cheese. It's done. Chill for several hours.


 Meanwhile, make the pita chips. Yes, you can buy pita chips but these ones are so good that I find them necessary.  They are really easy. You need a package of pitas, a stick of melted butter, grated Parmesan, and Italian seasoning.


Heat up the oven to 375 degrees.  Cut your pitas into either 4 triangles or 8...depending on the size, then separate them.  They should already be separated inside, so you just rip the attached part.  Anyway, you want them to be a good size for dipping.



In a seperate bowl, melt a stick of butter.  Lay the separated pita triangles on a sheet pan.  Brush with butter, then sprinkle Parmesan and Italian seasoning on each one.  Bake in the 375 degree oven for about 10 minutes. That's all! Avocado and Feta Cheese...there are few things better.



Avocado Feta Salsa

1 chopped tomatoes
2 chopped avocados
1 clove garlic, minced
1 TBS fresh, chopped oregano
1 TBS olive oil
1 TBS white wine vinegar
6 oz. crumbled feta cheese
Directions: In a bowl, stir together the chopped tomato, avocados, garlic, and oregano (and 1/4 cup red onion, if you like). Gently stir in olive oil and white wine vinegar. Stir in feta. Chill for at least a couple hours.
Italian Pita Chips

1 Pkg. of pitas (6 in package)
1 stick melted butter
shredded Parmesan cheese
Italian seasoning
Directions: Heat oven to 375 degrees. Cut each pita into 6 triangles. Separate the triangles and lay them on a sheet pan.  Brush tops with butter and sprinkle with Parmesan and Italian seasoning.  Bake for about 10 minutes.

LOVE this salsa! I can't wait to try it. And can I mention that I also love that you are anti-onion? So am I and I always cut the onion out! I'll take your extra tomato though ;) Can't wait to try this one! Oh, and I linked you on my blog and people have said good things about it so far. :)

oh, p.s. do the pita chips taste like the ones you buy at the store after baking? i haven't tried to make my own. looks fun!

i haven't tried the store bought pita chips...but, my in-laws were just over eating that dip and pita chips and they were saying they liked them better than the store ones because they weren't so hard. So, that's all I know. They were super easy though, and I think way yummy. Worth making.
