What to do.... with those leftover Easter eggs

Oh the year old question, when spring comes around. What to do with eggs leftover from Easter? If it were up to me I'd let them rot out there, but then who am I to say? Here are five great recipes to make with leftover eggs, but you don't have to wait until Easter to make them.


1. Scotch Eggs. Never heard of 'em? They are cold, hard boiled eggs, wrapped in a sausage meat mixture, coated in breadcrumbs and deep fried. They are usually served cold, with salad and pickles.





2. Deviled Eggs. What the devil? Don't wait 'til your next party to serve this favorite hors d' ouervre. Switch it up with pickle relish, chipotle, vinegar, green olives, pimientos, black pepper, or minced onion.





3. Egg Salad Sandwich. A classic. My hubby likes it mayo, mustard and wonder bread. For a more gourmet version- mix with lite mayo, dijon mustard, dill, and minced onion, on pumpernickle, topped with lettuce and tomato.





4. Potato Salad. Add them to momma's potato salad for extra protein and flavor.





5. Cobb Salad. Is a legendary salad that was born in Los Angeles at the Brown Derby Restaurant. It was whipped up as a late night snack for a hollywood theatre owner. It quickly gained popularity and now served worldwide. With eggs of course.

What great ideas! I plan to have the kids try these recipes. LOL Hope the kitchen survives them :)
