Jazzy Brown Bag Lunches


With the economy being the way it is, and us moms trying to be more frugal, more and more kids are brown bagging it. Here are some jazzy sandwiches, to keep your kids guessing what mom made today!

Mini Hero Subs
Spread a thin layer of butter, mayo and mustard ( I so don't get the butter thing, but whatever) on a hot dog bun. Add turkey, or ham, cheese, and whatever things your kid digs.


Tuna
1 can light- chunked tuna in water
1/4 cup celery chopped
3 T light mayo
2 tsp. fresh lemon juice

Curried Tuna (prepare regular tuna recipe as above)
1/2 cup Granny Apple Smith finely chopped
1 tsp curry powder

Southwestern Tuna (prepare regular tuna recipe as above)
2 T chopped fresh cilantro leaves
1 pickled jalapeno finely chopped


Chicken and Fruit Salad
1 Roasted Whole Chicken
1 medium bunch of spinach
2 med Red Delicious Apples
3/4 pound seedless grapes
1/3 cup bottled poppy seed dressing

Shred roasted chicken, chop 1 cup of spinach. Cut apples and grapes. Coat chicken, spinach and fruit with poppy seed dressing. Serve over spinach leaves or on croissants.

Turkey Melon Wraps
1/4 cup chopped cantaloupe
1 tortilla
1/4 (this recipe calls for horseradish, but I don't know any kid who would eat that) so substitute mayo or ranch
green or red lettuce leaves
12 oz smoked deli turkey breast

Add all ingredients to the tortilla, roll up and cut into half


On cold days, soup in a mug is a great idea. For Cream of Asparagus soup, that is a sure hit with kids, click here.

Hi, I'm coming by after seeing your site on Jenna's blog and twitter. She's pretty darn proud of you so I thought I'd come check it out.

I love all your cool ideas for lunch. My girls despise (high) school lunch and they are great at preparing their own lunches but I know they would appreciate some new ideas. I LOVE chicken salad with fruit but I've never made it. I'll be sure to keep this recipe. YUM!

I love the lady bug lunch box too, and I don't even have kids yet! I'm new to SITS and this is actually my FIRST comment :)

Your post made me think about grade school and how the lunch box and back pack you brought really worked as 'status' indicators. I worry about how schools and kids have changed since then and how I will EVER prepare my (future) children for school!

Butter was on everything before there was mayo, but Veronica is correct, it still makes an appearance to keep the bread from getting too soggy. Personally, I can't stomach the idea of butter and mayo together!
